Lemon Aubergine Chicken Sunblest Macaroni

Ingredients


  • . 300 g Sunblest Macaroni
  • . 2 Chicken breast (cut into strips)
  • . 2 Aubergines
  • . 120 g Butter
  • . 50 ml Oil
  • . 1 Garlic clove
  • . 450 ml Cream
  • . 1/4 cup Lemon juice
  • . 1 tablespoons Lemon zest (finely chopped)
  • . 2 tablespoons Parsley (finely chopped)
  • . 2 tablespoons Salt to taste
  • . 2 tablespoons Pepper to taste
  • . 100 g Parmesan (grated)

Method


  • 01. Boil the Sunblest macaroni as per instructions.
  • 02. In a medium frying pan, add the oil and butter add the chicken strips.
  • 03. Add the garlic and fry till just cooked.
  • 04. Add the lemon juice and zest.
  • 05. Add the cream and simmer for another 5 minutes.
  • 06. Add the parsley and grated parmesan and season with salt and pepper to taste.
  • 07. Dish the macaroni and pour the sauce over.
