Vegetarian Mushroom Herb & Cheese Sunblest Macaroni

Ingredients
. 300 g Macaroni
Sauce:
. 30 ml Oil
. 2 Onions cut in slices
. 1 Green Chilli
. 2 Garlic cloves (sliced)
. 250 g button Mushrooms (sliced)
. 1 tin Tomatoe
. 65 ml Tomatoe paste
. 15 ml Sugar
. 10 ml Mixed herbs
. 200 ml Chicken stock
. 150 ml White wine
. 2 tablespoons Parsley (chopped)
Cheese sauce:
. 250 ml Smooth cream cheese
. 250 ml Cream
. 500 ml Cheddar cheese (grated)
Method
01. Pre-heat the oven to 180°C. Grease oven dish with butter.
02. Cook the Sunblest Macaroni as per instructions and drain.
03. On medium heat, heat the oil in a large sauté pan, add the onion, garlic and chill and sauté to soft. Add the mushrooms and sauté till golden brown.
04. Add the rest of the sauce ingredients and season with salt and pepper.
05. Simmer to thick sauce consistency.
06. Mix the cream cheese and cream and half of the cheddar cheese.
07. Spoon some of the sauce into the oven dish and layer with the Sunblest Macaroni and then layer of cheese sauce.
08. Repeat and then sprinkle remaining cheddar cheese over.
09. Bake for 30 minutes till cheese is golden brown.
