Vegetarian Mushroom Herb & Cheese Sunblest Macaroni

Ingredients


  • . 300 g Macaroni

Sauce:


  • . 30 ml Oil
  • . 2 Onions cut in slices
  • . 1 Green Chilli
  • . 2 Garlic cloves (sliced)
  • . 250 g button Mushrooms (sliced)
  • . 1 tin Tomatoe
  • . 65 ml Tomatoe paste
  • . 15 ml Sugar
  • . 10 ml Mixed herbs
  • . 200 ml Chicken stock
  • . 150 ml White wine
  • . 2 tablespoons Parsley (chopped)

Cheese sauce:


  • . 250 ml Smooth cream cheese
  • . 250 ml Cream
  • . 500 ml Cheddar cheese (grated)

Method


  • 01. Pre-heat the oven to 180°C. Grease oven dish with butter.
  • 02. Cook the Sunblest Macaroni as per instructions and drain.
  • 03. On medium heat, heat the oil in a large sauté pan, add the onion, garlic and chill and sauté to soft. Add the mushrooms and sauté till golden brown.
  • 04. Add the rest of the sauce ingredients and season with salt and pepper.
  • 05. Simmer to thick sauce consistency.
  • 06. Mix the cream cheese and cream and half of the cheddar cheese.
  • 07. Spoon some of the sauce into the oven dish and layer with the Sunblest Macaroni and then layer of cheese sauce.
  • 08. Repeat and then sprinkle remaining cheddar cheese over.
  • 09. Bake for 30 minutes till cheese is golden brown.
  • 10. Garnish with parsley.
