One-pot Sundried Tomato & Olive Chicken with Sunblest Macaroni

Ingredients


  • . 2 Chicken Breasts
  • . 1 tablespoon Italian spices
  • . 3 Garlic cloves (Minced)
  • . Salt & Black Pepper to taste
  • . 1 Zest of a Lemon (Keep the juice)
  • . 60 ml Olive Oil
  • . 100 g Sundried Tomatoes (Chopped)
  • . 80 g Calamata Olives (Sliced)
  • . 4 Tomatoes (Chopped)
  • . 1 ea Green Chilli
  • . 400 g Sunblest Spaghetti
  • . 600 g Chicken Stock
  • . 600 g Black Pepper (for seasoning)
  • . 600 g Salt (for seasoning)
  • . 100 g Rocket (Optional)

Method


  • 01. Cut the chicken into small bite-size pieces, add minced garlic, Italian seasoning blend, salt, chopped green chilli, lemon zest and juice pepper and olive oil. Mix thoroughly to combine. Store in fridge to marinate for 1 hour.
  • 02. Heat oil in a large pot over medium-high heat. Add the spaghetti broken into smaller pieces.
  • 03. Fry to very light golden brown.
  • 04. Add chicken and cook until golden brown.
  • 05. Add sun-dried tomatoes, olives and cook, stirring frequently fore 2-3 minutes.
  • 06. Stir in chopped tomatoes and add chicken stock. Bring to the boil.
  • 07. Simmer for 10-12 minutes; the liquid will reduce and thicken.
  • 08. Stir in the rocket and stir well until wilted.
  • 09. Add seasoning according to your taste.
  • 10. Serve.
