Smoked Paprika Chickpea, Feta, Olive & Tomato Sunblest Macaroni Salad

Ingredients

300 g Sunblest Macaroni
.
1 tin Chickpeas (drained)
.
45 ml Oil
.
5 g Smoked Paprika
.
2 tablespoons Parsley (Chopped)
.
1 tablespoon Dried Oregano
.
1 tablespoon Basil (Chopped)
.
1 medium Cucumber (Chopped)
.
1/2 Red bell Pepper (Diced)
.
2 Tomatoes (Cubed)
.
1/2 cup Feta Cheese (Crumbled)
.
1/2 cup Kalamata Olives (Pitted and Halved)
.
1/3 cup Red Onion (Minced)
.
1/2 tablespoon Salt
For the dressing:

2 tablespoons Fresh Lemon Juice
.
1/4 cup extra virgin Olive Oil
.
1 tablespoon Sugar
.
Salt to taste

Pepper to taste
Method
01.
Pre-heat the oven to 180°C.

Using a oven tray, toss the drained Chickpeas, Oil and Smoked Paprika and toast for 15-20 minutes till crispy.
03.
Prepare the pasta according to package directions. Drain and add into a large bowl.
04.
Whisk constantly whisking, stream in the olive oil until thickened. Pour over the salad and mix well.
05.
Cover and refrigerate at least 1 hour.
