Smoked Paprika Chickpea, Feta, Olive & Tomato Sunblest Macaroni Salad

Ingredients


  • . 300 g Sunblest Macaroni
  • . 1 tin Chickpeas (drained)
  • . 45 ml Oil
  • . 5 g Smoked Paprika
  • . 2 tablespoons Parsley (Chopped)
  • . 1 tablespoon Dried Oregano
  • . 1 tablespoon Basil (Chopped)
  • . 1 medium Cucumber (Chopped)
  • . 1/2 Red bell Pepper (Diced)
  • . 2 Tomatoes (Cubed)
  • . 1/2 cup Feta Cheese (Crumbled)
  • . 1/2 cup Kalamata Olives (Pitted and Halved)
  • . 1/3 cup Red Onion (Minced)
  • . 1/2 tablespoon Salt

For the dressing:


  • . 2 tablespoons Fresh Lemon Juice
  • . 1/4 cup extra virgin Olive Oil
  • . 1 tablespoon Sugar
  • . Salt to taste
  • . Pepper to taste

Method


  • 01. Pre-heat the oven to 180°C.
  • 02. Using a oven tray, toss the drained Chickpeas, Oil and Smoked Paprika and toast for 15-20 minutes till crispy.
  • 03. Prepare the pasta according to package directions. Drain and add into a large bowl.
  • 04. Whisk constantly whisking, stream in the olive oil until thickened. Pour over the salad and mix well.
  • 05. Cover and refrigerate at least 1 hour.
