Vegetarian Tuna & Pea Sunblest Macaroni Salad

Ingredients
.
400 g Sunblest Macaroni
.
1 cup Frozen Peas or tinned
.
1 cup Frozen Corn
.
425 g tin Tuna in oil
.
65 ml Oil
.
30 ml Butter
.
1 tablespoon Chives (Chopped)
.
1 Shallots (Chopped)
.
1/2 Lettuce of your choice
.
2 Radishes (optional)
For the dressing:
.
2 tablespoons Fresh Lemon Juice
.
175 ml Mayonnaise
.
1 tablespoon Condensed milk
.
1 tablespoon Fennel (chopped)
.
1 tablespoon Salt to taste

1 Pepper to taste
Method
01.
Cook the macaroni according to the package directions and drain.
02.
In a medium saucepan, heat the oil and butter on medium heat and sauté off the shallots for 3-4 minutes.
03.
Add tuna and the frozen peas, add the chives.
04.
In a large bowl add the Sunblest Macaroni with the tuna mixture and toss well.
05.
Add the dressing.
