Vegetarian Tuna & Pea Sunblest Macaroni Salad

Ingredients


  • . 400 g Sunblest Macaroni
  • . 1 cup Frozen Peas or tinned
  • . 1 cup Frozen Corn
  • . 425 g tin Tuna in oil
  • . 65 ml Oil
  • . 30 ml Butter
  • . 1 tablespoon Chives (Chopped)
  • . 1 Shallots (Chopped)
  • . 1/2 Lettuce of your choice
  • . 2 Radishes (optional)

For the dressing:


  • . 2 tablespoons Fresh Lemon Juice
  • . 175 ml Mayonnaise
  • . 1 tablespoon Condensed milk
  • . 1 tablespoon Fennel (chopped)
  • . 1 tablespoon Salt to taste
  • . 1 Pepper to taste

Method


  • 01. Cook the macaroni according to the package directions and drain.
  • 02. In a medium saucepan, heat the oil and butter on medium heat and sauté off the shallots for 3-4 minutes.
  • 03. Add tuna and the frozen peas, add the chives.
  • 04. In a large bowl add the Sunblest Macaroni with the tuna mixture and toss well.
  • 05. Add the dressing.
